    Exclusive Beekman 1802 design

    When we began work on our fourth cookbook, "A Seat at the Table" (Sept 2017,) our Blacksmith Michael McCarthy designed this completely unique, historically inspired knife for us to use. It's featured in several of the photographs in the cookbook. The knife's hand-forged rustic design is reminiscent of knives that would have been used in early rural America. Beautiful enough to be used at the table, but strong enough to be used hunting or farming. We can easily picture William Beekman's son Cornelius carrying it into the woods.

    Each knife is hand-forged of steel, and though the handle gives the knife a rustic appeal, it is perfectly safe for use in cooking and dining. Blacksmith Michael McCarthy has previously designed knives for use at Dan Barber’s famous restaurant, Blue Hill at Stone Barns. 

    Care Instructions: The iron will rust very quickly if not taken care of. Vaseline or other oil or grease should be wiped on the blade after each use.
    To keep the edge sharp protect it from contact with other hard surfaces like glass or metal.
